He never wears a helmet nor uses a shield outside of very specific “one off” style situations as his preferred battle tactic is to wade into combat with his Broad Headed Dwarven Great Axe gripped in both hands screaming curses at his enemies.

Stilgar is a career soldier, and tends to volunteer for the more dangerous duties (which allow for greater freedom of operation).

In combat Stilgar tends towards more tactical positioning, team tactics, etc and always keeps a watchful eye on his team to make sure they are focusing on the foes which represents the greatest threat first, no one has gone down or been captured, etc etc. Because of this Trevor and Mortekei have tried several times to recruit him into more administrative and command positions but Stilgar has repeatedly turned down such offers, stating he is a fighting man and that is his talent.

Stilgar is typically sent as a intermediary between the Barbarians of Gorum’s Temple out on the front lines at Castle Firrine, and the Knights of Ozem back in Vigil, as he is well received in both camps and this appears to be a natural role he is uniquely suited for.
